Meet our Executive Chef

Eugene Minnieweather III is the Executive Chef at Hudson’s Bar and Grill. Raised in the St. Johns neighborhood of North Portland, he has been cooking professionally since he was old enough to hold a kitchen job.

His career includes time at the Nike World Campus, Beaches on the Columbia River and Portland Airport, Gustav’s in Clackamas and Vancouver, Stanford’s at Lloyd Center, Grand Central Bowl, Lotus Card Room and Cafe, and Newport Bay at Washington Square.

At home, Eugene loves cooking with his wife, proudly serving as sous chef and prep cook. They enjoy cooking for family gatherings and believe the best meals are shared. When he is not in the kitchen, Eugene’s passion for classic cars keeps him busy as a longtime enthusiast and Chapter President of a worldwide car club.
