Crafted from hand-selected barrels, this bourbon is bottled directly from the barrel; uncut and unfiltered at more than 125 proof. It reflects the way whiskey was produced in the days before Prohibition, when Edmund Haynes Taylor, Jr. was the owner of Buffalo Trace Distillery. Drawn from barrels aged in warehouses constructed over a century ago under Taylor's watchful eye, the taste is smooth, yet powerful and uncompromising, just like its namesake.

The aroma carries lightly toasted oak, with dried figs and butterscotch. One sip brings flavors of sweetness balanced with tobacco and dark spices. The finish is just long enough to prepare the palate for another sip. The bottle itself is a likeness to Colonel Taylor's original design used over a century ago. Colonel Edmund Haynes Taylor, Jr. is widely considered one of the founding fathers of the bourbon industry, fighting for the Bottled-in-Bond Act of 1897, nearly three decades after he purchased what is now called Buffalo Trace Distillery. During his time, Taylor implemented several innovative methods still used today, including climate controlled aging warehouses. Many of the barrels selected for the E.H. Taylor, Jr. Single Barrel are aged in Warehouse C, which was built by Taylor in 1881 and proven to be an excellent aging warehouse. Weltenburger Kloster currently brew several styles including pils, bocks and, of course, weiss biers. A proportion of the liquid remains in ex-Bourbon casks whilst the balance is apportioned between the finest Gonzalez Byass Sherry casks, previously holding 30-Year Old Matusalem Oloroso Sherry, and Cabernet Sauvignon wine barriques. The three styles are then expertly brought together to perfectly combine their unique characteristics and flavors. Aromas of cinnamon, vanilla, and red fruits. Throughout harvest, Winemaker Richard Batchelor worked closely with local growers and visited each vineyard to taste for maturity and ripeness to determine the precise moment to pick the fruit. Grapes were harvested during the cool hours of the morning to preserve bright fruit notes and destemmed into the press, where each lot was processed on a champagne cycle. This is a slower press cycle that is extremely gentle on the fruit ensuring optimum fruit character is preserved. The juice was kept separate and partially fermented in stainless steel tanks with French oak staves. Once fermentation was finished, this wine was blended together to encapsulate the varietal character and highlight the harmony arising from the wood fermented portion.

The nose showcases purple fruit tones of plum, black cherry, dried blueberry, black pepper and clove from the 10 months in a program of 23% new French oak. This is the second vintage of La Grande Grande Majesté Pinot Noir, a wine more than thirty years in the making. Since 1988, when the Indelicato family purchased the San Bernabe Vineyard. Today, the Indelicatos farm the top one-fourth of the vines in the San Bernabe AVA, all of which have been replanted to maximize quality rather than quantity, with a precise match of ideal variety, clone and rootstock to the micro-terroir of each vineyard block. Most of the fruit for DarkRock Cabernet Sauvignon was sourced from The Cliffs, our estate vineyard in Horse Heaven Hills. The Cliffs is planted high atop dramatic basalt bluffs overlooking the Columbia River, which helps moderate temperatures throughout the growing season. Sandy loam soils provide excellent water drainage, creating stress on the vines that is critical for quality grape growing.
Cabernet Sauvignon from The Cliffs presents a balanced tannin structure and classic characteristics of red fruit and savory herbs accented by cedar and baking spices. Merlot from The Cliffs is full-bod-ied with a long mid palate, structured tannins and flavors of black plum married with cocoa. Syrah grown in our estate Beverly Vineyard rounds out the blend. Located in the Columbia Valley, this vineyard is hot, windy, and sandy, and produces wines of concentration and power. The Syrah contributes characteristics indicative of Australian Shiraz, showing kirsch liquor and savory spice notes framed by structured tannins.
After pressing, a portion of the Cabernet Sauvignon was left on the skins for nine months to encour-age color extraction and depth of aroma and flavor development. The wine was fermented and aged primarily in concrete tanks to create a core of pure, fresh fruit. The blend was then transferred to French oak barrels for an additional eight months of aging, to layer in vanilla and baking spice characteristics.

The fruit that hails from our warm vineyard site in the Columbia Valley just north of Wahluke Slope contributes concentrated, slightly jammy, dark fruit. This harmonizes beautifully with the blue fruit tones and refined, soft tannins of the fruit grown in our Horse Heaven Hills vineyard, a cool site perched high on basalt cliffs overlooking the Columbia River. A small portion of the bottling comes from our historic estate vineyard in the Wahluke Slope AVA, which offers bright red fruit components. When these three selections are blended, we achieve an expressive, sophisticated wine with complex aromatics and a velvety texture. The wine is aged for 18 months, largely in French oak. Our 2019 Cabernet Sauvignon opens with aromas of freshly baked cherry pie with herbal accents.
